Speedy and easy, these pastry tarts recipes are especially good when you need to feed unexpected guests! They are fresh, light and tangy …just perfect for Summer.

Peach, mozzarella and prosciutto tart

You will need…

1 375g pack ready rolled puff pastry

1 egg whisked.

2 peaches, peeled and sliced

125g mozzarella

5/6 slices prosciutto

1 handful rocket

Salt and pepper

1 tbsp olive oil

Serves 4 to 6

Here’s what to do…

  1. Unroll the pastry onto baking paper, and place on a baking sheet,
  2. Crimp the edges to form a ridge, brush with egg glaze and prick the base.
  3. Bake in the oven at 180C for 20 minutes until risen and golden. If the base has risen, prick with a fork to deflate. Leave to cool.
  4. Cover base with the sliced peaches, broken mozzarella, prosciutto and scatter with rocket and season. Finally, drizzle with olive oil before serving.
  5. Can be served cold or can be returned to the oven for 5 minutes to heat before the rocket and olive oil has been added.

Tips…

Can be served on its own or with a crisp salad.

Prepare the base ahead of time and simply add the topping when ready to serve.

Tomato, pesto and goats cheese tart

A delicious alternative to try and just as easy!

You will need…

1 375g pack ready rolled puff pastry

1 egg whisked

2 tbsp pesto

4 large tomatoes, sliced

70g goats creamy goats cheese

5/6 slices prosciutto

1 handful fresh basil

1 tbsp olive oil

Salt and pepper

Serves 4-6

Here’s what to do…

  1. Unroll the pastry onto baking paper, and place on a baking sheet.
  2. Crimp the edges to form a ridge, and brush edges with egg glaze.
  3. Spread the pesto onto the pastry base, scatter with the sliced tomatoes, goats cheese and prosciutto and season.
  4. Bake for 20 to 25 minutes at 220C, until pastry is browned and the base is cooked.
  5. Serve immediately, or leave to cool.
